Latteria Mezzano cheese, sweet and delicate, takes on a stronger and fuller flavour, acquiring greater flavour. It is aged for 5/6 months and is excellent paired with a good full-bodied red wine.

The structure is more crumbly, while still maintaining a good consistency.

The color of the paste is straw yellow.

It has a smooth and elastic rind, a tender texture, white color and light uniform holes.
The wheels of Latteria di Borgo Plaudo are identified by the symbol found on the side and by the Roman numeral (II).
