Smoked Friulian Ricotta - An Authentic Specialty of Friuli Venezia Giulia

Smoked Friulian Ricotta is, like frico, the symbol of the inventiveness of a poor cuisine which however does not want to give up satisfying satisfactions for the palate. This delicious ricotta is made from the residual whey from cheese processing, heated with the addition of milk to over 80° and coagulated thanks to the addition of citric acid. Subsequently, it is pressed, dry salted and smoked with beech wood, giving it a unique flavor and a compact structure.

Product Features

Smoked Friulian Ricotta has a browned crust typical of smoked products (not edible) and a straw-white interior. The flavor is rich and aromatic, ideal for use in numerous typical Friulian dishes.
