TRADITIONAL FRIULAN POLENTA RECIPE:

Bring about 2 L of water to the boil in a pan, possibly a copper pot, leaving at least 3-4 cm from the edge and add 20-25 g of coarse salt. Keeping the heat high, delicately pour in the flour (about 500g), mixing it with a whisk. Continue pouring in the flour until you reach the desired consistency. Cook for 40-50 minutes in the pan with a stirrer or stirring often, possibly with a wooden ladle.
