The Emperor's Ham

Cooked ham is a true piece of history of Friuli Venezia Giulia, a regional specialty that has received the title of PAT Traditional Agri-food Product . Specifically, we are talking about Praga cooked ham , a historical recipe associated with the city of Trieste where this product is said to have been born in the era of the Austro-Hungarian Empire (hence the name of Praga, probably linked to the origin of the recipe).

It is a heavy pork leg which stands out for its artisanal preparation, flavoring of the meat, baking and then natural smoking. The typical Prague ham should be served still hot and on the bone, it has now been adapted to modern needs and is therefore easy to find in boneless slices.

Honorable mention goes to the cooked ham in a bread crust , another famous recipe from Trieste, which involves cooking the leg wrapped in a crust made of water and flour without yeast. It is the ham of the party, to be served strictly hand-cut.
