Montasio cheese , a gem of Friuli Venezia Giulia , embodies centuries of dairy tradition. Its history has its roots in the 13th century, when the Benedictine monks began producing it in the mountains of Montasio. Today, the Caseificio della Savia dairy carries on this legacy, meticulously respecting the ancient artisan techniques.

This cheese has a high nutritional value and is well balanced in its composition of water, lipids and proteins, making it not only an excellent complement but also an excellent second course. Its structure is compact, with holes and a straw yellow color, and a rind present.

Montasio can be enjoyed in different maturations: fresh after 60 days, with a delicate and pleasant taste; mezzano after 5-10 months, with stronger flavors and marked aftertastes; or aged for more than 12 months, ideal to accompany with polenta or to grate.

With its unique flavour, Montasio enriches every culinary experience, perfect with a glass of Friulian wine or a Merlot . Each taste tells the story of the Friulian valleys, where uncontaminated nature and the passion of local producers come together in a product of excellence
