The Friulian "sideboard".

In every Friulian house there was, and still is, a cupboard: a piece of furniture from the peasant tradition that was used both for kneading and for containing and storing flour, pottery and other foodstuffs.

Our cupboard is always full of jars, bottles and bags full of delicacies.

If we open it to look for a pasta sauce we find tomato puree with its scent of the hot summer sun, game sauces and classic ragù .

 

For a quick aperitif there are fresh vegetable creams and dried fruit , but also fresh fruit juices and syrups.

While if we look for condiments we find Friulian oil , fresh and aromatic, and balsamic vinegar , local spices such as saffron and dried oregano.
