Sausages are a typical dish of the Julian areas of Friuli Venezia Giulia once subject to the dominion of the Austro-Hungarian Empire.

Symbol of Central Europe , they have now become a usual second course throughout the Friulian territory.

It is a sausage cooked in natural casing , made of pork and, sometimes, lean beef with salt and spices.

They are accompanied by side dishes of potatoes , sauerkraut or cooked vegetables.
