Ribolla Gialla Brut is a refined and light sparkling wine, produced with 100% Ribolla Gialla grapes.

This wine comes from vineyards located in Capriva del Friuli, in the Collio Goriziano, on soil characterized by ponca, a soil composed of marl and sandstone, which gives the wine a particular mineral note.

Castello di Spessa is a historic winery located in the heart of Collio. The winery is managed by the Pali family, who since 1987 has enhanced the winemaking traditions of Friuli Venezia Giulia with a sustainable and innovative approach.

Ribolla Gialla Brut has a pale straw yellow color with a fine and persistent perlage. On the nose, it releases intense floral scents of hawthorn and white peach. On the palate, it is delicate and fresh, with a pleasant aromatic persistence and a harmonious taste.

This sparkling wine is ideal as an aperitif and pairs perfectly with fish starters, soups, vegetable dishes and fresh cheeses. We recommend serving it at a temperature of 12°C to fully appreciate its organoleptic qualities.

The grapes are harvested by hand at the end of August, followed by maceration on the skins for 10 hours at 5°C. Fermentation and refermentation take place in an autoclave at low temperature for approximately 2 months, followed by a refinement of 6 months in the tank and a further refinement of 2 months in the bottle.
