The 2023 Ribolla Gialla presents itself with a bright golden yellow color. On the nose, fresh citrus and mineral notes stand out, enriched by aromas of fresh flowers such as elderberry, blue iris and acacia, evoking the Friulian hills. On the palate, it recalls citrus fruits, green apple and flowers of the hills, maintaining a persistent flavor and freshness.

This native wine comes from vineyards cultivated on hillside terraces with ponca soil, a combination of marl and sandstone, typical of the Eocene territory which gives the wine its mineral and savoury character .

The harvest, which takes place in mid-September, is done strictly by hand, carefully selecting the bunches to get the best of the fruit. The winemaking combines ancient traditions and modern techniques: after a light maceration of 8-10 hours at low temperature, a fermentation at a controlled temperature on indigenous yeasts follows for 12 days. The wine undergoes two rackings: the first in a stainless steel tank, the second in a natural Tuscan terracotta amphora, where it ages for 8-10 months, developing a unique complexity.

Excellent as an aperitif or paired with appetizers , vegetable-based first courses, white meats and fish dishes, even slightly spiced ones, Ribolla Gialla 2023 is a versatile and refined wine.
