The Latteria 60 Giorni di Ovaro cheese (Davar in Friulian) is produced in the Luincis dairy, a hamlet of the municipality of Ovaro, located in Carnia at 525 meters above sea level. This cheese reflects the perfect fusion between traditional craftsmanship and modern technologies, guaranteeing very high standards of hygiene and quality without giving up the organoleptic sensations of a cheese produced "as it once was".

Product Features

Latteria Ovaro is made with only thermised whole cow's milk . When it is fresh, it has a classic size of around 6.50 kg, which is reduced to less than 6 kg when it is more mature. The paste, straw yellow in colour, has small, well-distributed holes. On the palate, fresh cheese is sweet, with buttery notes, while as it matures it becomes drier, maintaining a consistency that is never rubbery and a stronger flavour.

The Luincis dairy has recently been renovated, blending tradition and innovation. Located in the heart of Carnia, it produces cheeses that reflect the passion and dedication of local producers, using high quality milk sourced exclusively from Italy.
