The peculiarity of Jamar is the maturation in a 70 meter deep karst cave, with constant temperature and humidity all year round.

Jamar is a semi-hard, crumbly cheese, sometimes blue-veined, with intense and persistent aromas reminiscent of the cave where it is aged. The flavor is characteristic, with strong and spicy notes, and collects the fragrance of milk.

The name "Jamar" comes from the limestone caves (jama in Slovenian) of the Karst. This cheese with a wrinkled, brown rind is matured for at least 4 months in a cave 70-80 meters deep, maintaining a constant temperature and humidity.

Excellent combined with local honey and ideal in the kitchen to create dishes with a strong and unique flavour. Jamar has inspired many chefs, leading to the victory of various culinary competitions. Its texture is crumbly, without holes, straw-coloured, moist and fat.
