Giovacco - An artisanal cheese from Friuli Venezia Giulia

Giovacco is a sweet, savory and slightly acidic soft cheese, with a thin rind slightly flowery thanks to penicillium candidum. The original recipe is from the cheesemaker Gioacchino, from whom it takes its name: Gio- like Gioacchino and -Vacco because it is made with cow's milk. This cheese, exceptional on a tasting platter, is also perfect for gastronomic preparations thanks to its strong and complex flavour.
