“Pignoletto” corn flour - Azienda Agricola Buosi Ettore Ssa

The “Pignoletto” corn flour is obtained from crops of ancient glassy red pignoletto corn harvested from cobs selected one by one manually and dried in gabions. When the corn reaches the right humidity, we shuck it and take it to grind.

This flour is one of the oldest, the result will be a polenta with a rustic, intense, at times almost bitter flavour, perfect for accompanying cheeses, frico and cured meats.

Expiration : 1 year from grinding

Minimum cooking time for polenta : 50 min.

Storage method : Store in a cool, dry place. Once the package has been opened, store tightly closed in the freezer.
