Molino Persello Spelled Flour is produced with wheat grown exclusively in Friuli with a strictly controlled supply chain from field to table.

On a health level, the stone mill allows you to preserve the nutritional characteristics of the grain, maintaining the mineral salts, vitamins, fibers and secondary compounds such as polyphenols present in the bran part of the grain. Furthermore, the gluten present is less "tenacious" than that present in modern grains, and therefore more digestible and suitable for people with gluten sensitivity.

Products obtained using spelled, such as bread and pizza, have a lighter and more digestible dough.
