Compote made with organic Florina apples grown on the farm, with the addition of organic Cassia cinnamon, and sweetened with agave syrup: a natural product extracted from the sap of blue agave leaves (Mexico). The syrup, rich in fructose (90%), has a very low glycemic index and a neutral flavor. This organic compote is made with an ancient apple variety resistant to scab (the main apple disease), very high in pectin, and particularly suitable for the production of jams, creams, and compotes. Because of this characteristic, the apples are not subjected to pesticide treatments. The jam is finally flavored with top-quality ground cinnamon, resulting in a product with balanced flavors, where both the apple and the spice complement each other without one overpowering the other.

This apple, orange, and ginger compote is handcrafted with Florina apples, a local variety that adapts extremely well to the mountainous terrain where the company is located. Given the variety's hardiness, the fruits are not subjected to pesticide treatments. The compote is sweetened with agave syrup: a natural product extracted from the sap of the leaves of the blue agave (Mexico), rich in fructose (90%), has a very low glycemic index, and a neutral flavor. This product is flavored with Sicilian orange peel and finely chopped fresh Peruvian ginger. The unmistakable scent of bergamot, "Calabria's green gold," makes this compote unique, further enhanced by a pinch of finely chopped fresh Peruvian ginger.

Pear and blackberry compote made with organically grown fruit on the farm, using heirloom local pear varieties typical of the Valcanale. The blackberries are harvested when they have partially lost their acidity and are rich in aroma and flavor. The compote is sweetened with agave syrup, a natural sweetener, and lightly flavored with organic star anise. The pears used in the compote are local varieties that have adapted over time to the climate and mountain environment of the Valcanale. Given the hardiness of the local varieties, no pesticide treatments are necessary to protect the fruit, which has an intense flavor and fine grain size. The addition of blackberries to the pear puree lends a creamy consistency and a pleasant, slightly tart, aromatic, and spicy note from the star anise.
