Soppressa in Cortile is a fine example of the charcuterie tradition of Friuli Venezia Giulia. This seasoned salami is prepared with the best meat from our pigs , using all parts of the pig: thigh, loin, belly, neck and shoulder. The artisanal processing and the long maturation of at least six/eight months allow the intense aromas characteristic of this traditional cured meat to develop.

Originally prepared in the Friulian countryside to be consumed during the harvests, Soppressa in Cortile has a large diameter (up to 120 mm), a soft slice and a pink colour. The flavor is rich and enveloping , perfect for enriching mixed dishes of cured meats or for the preparation of hot dishes combined with the inevitable polenta.

Each soppressa is the result of the passion and skill of our local producers, who follow traditional methods handed down from generation to generation. The maturation takes place in natural cellars, where the unique microclimate of Friuli helps to give the product its unmistakable flavour.
