Latteria di Grotta is a unique cheese for the intensity of its aroma and flavour, thanks to its maturation in a tuff cave dating back to the 1700s. This traditional method gives the cheese a compact and slightly crumbly texture, enriched by hints of undergrowth.

Produced with raw milk, Latteria di Grotta is matured for 3-4 months in controlled temperature and humidity cells, and then refined in a cave located in a hilly area of Tuscany for a further 3-4 months. This process gives the cheese an intense flavor and a particular structure.
